Italian twist on cob loaf dip, perfect for entertaining a crowd. Ideal for parties with loved ones.
Ingredients:
  • 1 cob loaf
  • 5 cherry tomatoes, quartered
  • 5 stuffed green olives, sliced
  • 100g pepperoni salami, sliced or cut into thin strips
  • 36.40 gm olive oil
  • 1/2 onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 red capsicum, deseeded, finely chopped
  • 44.40 gm tomato paste
  • 375g sour cream
  • 320g (4 cups) coarsely grated tasty cheese
  • Chopped fresh continental parsley
Instructions:
  • Preheat the oven to 180°C/160°C fan forced. Carefully slice off the top third of the cob loaf. Gently remove the inside bread in one piece, maintaining a 2cm thick wall. Set aside the top and inside bread for later use.
  • Place the loaf on a baking tray and generously spray with oil. Bake for about 20 minutes until crispy. Slice the reserved top and inside of the cob and place on a tray with the tomato, olive, and 20g of peperoni. Give it another hearty spray with oil and bake for 5-10 minutes until the bread is crisp.
  • While the oil is heating in a large saucepan over medium heat, add the onion, garlic, capsicum, and remaining pepperoni. Cook and stir frequently for about 5 minutes until softened. Then, mix in the tomato paste, sour cream, and cheese until everything is melted and well combined.
  • Spread the cheese mixture generously inside the loaf. Layer with the roasted tomato, olive, and pepperoni. Garnish with fresh parsley and serve alongside crusty bread.
