Picnic pizza cob loaf recipe

Delicious cob pizza - a convenient make-ahead crowd-pleaser for any gathering. Just slice and enjoy at your next picnic or party!
Ingredients:
  • 56.88 gm extra virgin olive oil
  • 1 tsp finely chopped fresh rosemary leaves
  • 605g wholemeal sourdough cob loaf
  • 100g chargrilled red capsicum
  • 4 cheddar cheese slices
  • 20g baby spinach
  • 100g thinly sliced salami
  • 500.00 ml pitted and halved marinated green olives, drained
  • 250.00 ml loosely packed fresh basil leaves
  • 375.00 ml drained semi-dried tomatoes
Instructions:
  • In a small frying pan, combine oil, rosemary, and garlic. Season with salt and pepper to enhance flavors.
  • Trim the top off the cob loaf with a serrated knife. Set the top aside. Carefully hollow out the center, leaving a 1.5cm crust, and discard the soft bread. Brush the inside of the loaf and the underside of the reserved top with the rosemary mixture.
  • On a large plate, layer the cob loaf with capsicum, cheese, spinach, salami, olives, basil, and tomatoes. Top with the other half of the cob loaf to create a delicious sandwich.
  • Wrap the loaf tightly in plastic wrap and place another large plate on top. Add 2 heavy cans to compress the filling. Refrigerate overnight to enhance flavors. Serve.
