Delicious pizza scrolls with a sweet burst of pineapple - ideal for lunchboxes, picnics, or games.
Ingredients:
  • 375g (2 1/2 cups) self-raising flour
  • 390g (1 1/2 cups) thick Greek-style yoghurt
  • 125ml (1/2 cup) tomato pizza sauce
  • 150g (1 1/2 cups) coarsely grated 4 cheese melt
  • 100g shaved ham, torn
  • 150g pineapple, finely chopped
Instructions:
  • Preheat your oven to 180°C (160°C fan forced) and prepare a large baking tray by lining it with baking paper.
  • Start by sifting the flour into a large bowl and then create a well in the center. Pour in the yogurt and 80ml (1/3 cup) cold water. Use a flat-bladed knife to mix in a cutting motion until the mixture forms a sticky dough. Transfer the dough onto a lightly floured surface and knead gently until smooth. Roll out the dough on a floured surface into a 35 x 45cm rectangle.
  • Spread the pizza sauce evenly over the dough. Sprinkle with 100g (1 cup) cheese. Add the ham and pineapple on top. Roll the dough starting from the longest side to create a log. Cut the log into 12 even slices. Arrange the slices on a baking tray. Bake for 15 minutes. Sprinkle the remaining cheese on top and bake for an additional 10-15 minutes until golden and cooked through. Allow to cool slightly before serving.
