Pizza wedges with two toppings

Delight guests with crowd-pleasing pizza bites featuring a variety of delicious toppings.
Ingredients:
  • 2 (30cm each) pizza bases
  • 44.40 gm tomato paste
  • 165.00 ml reduced-fat pizza cheese
  • 2 kumatoes, thinly sliced
  • 125.00 ml chargrilled capsicum, thinly sliced
  • 62.50 ml pitted kalamata olives, halved
  • 70g feta, crumbled
  • fresh oregano leaves, to serve
  • 187.50 ml reduced-fat pizza cheese
  • 170g potato
  • 150g rindless shortcut bacon, chopped
  • 40.00 ml finely grated parmesan cheese
  • 30g baby rocket
Instructions:
  • Preheat your oven to 220°C (200°C fan-forced) and line 2 baking trays with baking paper. Place 1 pizza base on each prepared tray.
  • Prepare the Greek salad pizza by slathering tomato paste over the base, then sprinkle with 1/2 cup of pizza cheese. Layer with kumato, capsicum, olives, feta, and the rest of the pizza cheese. Bake for 12 to 15 minutes until the cheese is gooey and the base is perfectly crispy. Garnish with oregano and slice into 16 delicious wedges.
  • Sprinkle 1/2 cup of pizza cheese over the base. Layer the potatoes neatly on top of the cheese. Add the bacon, parmesan, and the rest of the pizza cheese. Bake for 12-15 minutes until the cheese is melted and the base is crispy. Finish by garnishing with rocket, cut into wedges, and serve.
