Satisfy your taste buds with this delicious southwestern fusion appetizer - a perfect blend of pizza and quesadilla.
Ingredients:
  • 1/2 cup salsa
  • 1/2 cup sour cream or plain yogurt
  • 1/4 cup chopped red bell pepper
  • 1/2 cup finely chopped cooked chicken
  • 1 package (11 oz) Old El Paso™ Flour Tortillas for Burritos (8 Count)
  • 1/4 cup guacamole
  • 1/2 cup from 1 can (16 oz) Old El Paso™ Traditional Refried Beans
  • 1 cup shredded Cheddar or Monterey Jack cheese (4 oz)
Instructions:
  • Preheat the oven to 350°F. Combine salsa and sour cream in a small bowl. Transfer half of the salsa mixture to a separate bowl for topping. To the remaining half, mix in half of the bell pepper and all of the chicken.
  • To create 2 flavorful stacks, assemble them as follows: Place 2 tortillas on an ungreased cookie sheet. Spread each tortilla with the chicken mixture. Add another layer by spreading 2 tortillas with guacamole and placing them on top of the chicken mixture. Follow with 2 more tortillas spread with refried beans, then add them on top of the guacamole layer. Finish off each stack with the reserved salsa mixture, another tortilla, the remaining bell pepper, and a generous sprinkle of cheese.
  • Bake for approximately 15 minutes, or until the cheese is gooey and the filling is piping hot. Slice each stack into 8 satisfying wedges.
