Eastern European yeast-raised coffee cake with a sweet crumb topping, perfect for festive celebrations.
Ingredients:
  • 1 cup raisins
  • water to cover
  • 1 (.25 ounce) package active dry yeast
  • 1 cup warm water
  • 3 eggs
  • 6 cups all-purpose flour
  • 1 cup all-purpose flour
  • 1 tablespoon butter
Instructions:
  • Place the raisins in a bowl and cover them with water. Let them soak until they start to plump up, which should take at least 15 minutes.
  • In a bowl, combine yeast with warm water. Allow it to sit until the yeast softens and a creamy foam forms, approximately 5 minutes.
  • In a saucepan over medium-high heat, combine milk and 1/2 cup butter. Heat until the milk is almost boiling, around 5 minutes. Remove from heat and let the scalded milk cool to lukewarm.
  • In a bowl, combine 1 cup sugar, eggs, salt, nutmeg, and vanilla extract. Mix well. Stir in the milk mixture and yeast mixture until just combined. Fold in drained raisins. Gradually add flour, 2 cups at a time, beating well until the dough is well mixed. Place the bowl in a warm spot, cover with a clean towel, and let the dough double in size for about 2 hours.
  • Prepare two 9x5-inch loaf pans by greasing them.
  • Deflate dough to remove air and transfer it to the greased loaf pans.
  • Combine 1 cup sugar, 1 cup flour, and 1 tablespoon butter in a bowl. Use 2 knives to cut the mixture in a scissor-like motion until crumbly. Sprinkle over dough and let it double in size for 30 to 45 minutes.
  • Preheat the oven to 310°F (154°C) to create the perfect cooking environment.
  • Bake in the preheated oven for about 45 minutes, or until a toothpick inserted into the center comes out clean. Then, remove the loaves from the pans and let them cool on a wire rack.
