Ingredients:
  • 185ml milk
  • 2 tsp (7g/1 sachet) dried yeast
  • 55g caster sugar
  • 375g plain flour
  • 1 tsp finely grated lemon rind
  • 1 egg, lightly whisked
  • 20g butter, melted
  • 90g sultana
  • 80g currants
  • 65g mixed peel
  • 1 egg yolk
  • 41.20 gm milk
  • Butter, to serve
  • 150g icing sugar
  • 10.00 gm cold water
  • 10.60 gm lemon juice
Instructions:
  • In a small bowl, mix together milk, yeast, and 1 tablespoon of sugar. Let it sit for 5 minutes or until it becomes frothy.
  • In a bowl, mix together flour, cinnamon, nutmeg, lemon rind, and the rest of the sugar. Add the milk mixture, egg, and butter; mix until well combined. Transfer the dough to a lightly floured surface and knead for 10 minutes until smooth and elastic. Place the dough in a bowl, cover it with plastic wrap, and let it sit in a warm, draft-free place for 1 hour or until it doubles in size.
  • Preheat the oven to 200°C and lightly grease an oven tray. Add the sultanas, currants, and mixed peel to the dough and knead until smooth. Divide the dough into 3 portions. Roll each portion into 40cm-long logs and place them on the tray to plait. Combine egg yolk and milk, then brush it evenly over the bun. Allow it to rest for 10 minutes to rise. Bake for 10 minutes, then reduce the heat to 180°C and bake for an additional 20 minutes until golden and the loaf sounds hollow when tapped. Allow it to cool before serving.
  • Mix the icing sugar, water, and lemon juice in a bowl until smooth. Transfer the mixture to a small plastic bag, cut off a tip, and drizzle over the bun. Serve sliced with butter.
