Plaited fruit loaf

Make a beautiful braided fruit loaf at home for a delicious baking experience.
Ingredients:
  • 185ml milk
  • 2 tsp dried yeast
  • 375g plain flour
  • 2 tsp bread improver
  • 2.50 gm ground cinnamon
  • 1/2 tsp ground allspice
  • 1 tsp finely grated lemon rind
  • 2.40 gm salt
  • 1 egg, lightly whisked
  • 20g butter, melted
  • 90g sultana
  • 80g currants
  • 95g mixed peel
  • 65g almond
  • 1 egg yolk
  • 41.20 gm milk, extra
  • 150g icing sugar
  • 1-10.00 gm warm water
Instructions:
  • In a small bowl, mix together the milk, yeast, and 1 tablespoon of sugar. Let it sit for 5 minutes until it becomes frothy.
  • In a large bowl, mix together the flour, bread improver, cinnamon, allspice, lemon rind, salt, and remaining caster sugar. Create a well in the center. Pour in the milk mixture, egg, and butter. Stir until well combined. Transfer the dough to a lightly floured surface and knead for 10 minutes until smooth and elastic. Place the dough in a large bowl, cover with plastic wrap, and let it sit in a warm, draft-free place for 1 hour until it doubles in size.
  • Preheat the oven to 200C and lightly grease an oven tray. Knead the dough with sultanas, currants, mixed peel, and almonds until smooth and fruit is evenly distributed.
  • Divide the dough into 3 equal portions, then roll each portion into a 40cm-long log. Place the dough logs on the prepared tray and braid them, tucking the ends underneath. In a small bowl, mix the egg yolk and extra milk together, then brush the mixture evenly over the bun. Let it sit for 30 minutes to rise. Bake in a preheated oven for 10 minutes, then reduce the heat to 180C and bake for an additional 20 minutes until the loaf is golden and sounds hollow when tapped on the base. Remove from the oven and allow to cool before serving.
  • Prepare the icing by mixing the icing sugar with just enough water to create a smooth paste. Drizzle the icing over the bun using a spoon. Slice the bun and serve with butter.
