Savor the robust flavors and hearty texture of this simple vegetarian pasta dish featuring plant-based Italian sausage.
Ingredients:
  • 12 ounces vegetarian Italian-style sausage, sliced
  • 1 medium onion, cut into thin wedges
  • 1 medium yellow bell pepper, cut into bite-sized strips
  • 0.25 cup dry red wine
  • 1 (28 ounce) can crushed tomatoes
  • 1 (14.5 ounce) can fire-roasted diced tomatoes, with juice
  • 1 tablespoon Italian seasoning
  • 1 teaspoon white sugar
  • 0.25 teaspoon crushed red pepper
  • 1 (8 ounce) package dried penne pasta
  • 2 tablespoons shredded Parmesan cheese, or to taste
Instructions:
  • In an extra-large skillet over medium-high heat, sizzle the sausage in oil until beautifully browned, rotating occasionally for about 5 minutes. Take out the sausage, but keep the flavorful drippings in the skillet.
  • Sauté onion, bell pepper, and garlic in the skillet over medium heat until softened, approximately 5 minutes. Deglaze the skillet with wine, scraping up any browned bits, for 1 minute. Stir in crushed tomatoes, fire-roasted tomatoes, Italian seasoning, sugar, salt, and red pepper. Add sausage back to the skillet and bring to a boil. Reduce heat, cover, and simmer for 10 minutes, stirring occasionally. Uncover and cook to reach desired thickness, about 5 minutes.
  • While you wait, bring a large pot of gently salted water to a boil. Add penne and cook, stirring occasionally, until al dente, about 11 minutes. Drain the pasta.
  • Plate the pasta, generously top it with sauce, and finish with a sprinkle of Parmesan cheese.
