Delightful cheese-filled plantain empanadas, flourless and only 3 ingredients, inspired by Nicaraguan cuisine.
Ingredients:
  • 1 large ripe plantain
  • 4.5 tablespoons shredded mild Cheddar cheese
  • 2 tablespoons vegetable oil
Instructions:
  • Cut the plantain into three pieces, leaving the peel intact.
  • 1. Boil plantain pieces in bubbling water for 3 to 5 minutes. Remove with a slotted spoon and cool. Peel and mash in a bowl.
  • Divide the mashed plantain into 3 golf ball-sized portions. Wrap each portion in plastic wrap and flatten into a 6-inch round. Place 1 1/2 tablespoons of cheese in the center of each round. Fold over the rounds and seal the edges by pinching them together.
  • In a skillet over medium heat, fry stuffed plantains in oil until lightly browned on both sides, about 2 to 3 minutes per side. Drain on paper towels to absorb excess oil.
