Ingredients:
  • 0.75 cup butter, softened
  • 3 ounces cream cheese
  • 1 cup white sugar
  • 1 egg
  • 2.75 cups all-purpose flour
  • 0.25 teaspoon salt
  • assorted colors of paste food coloring
  • 24 lollipop sticks
Instructions:
  • Cream together the butter, cream cheese, and sugar in a bowl until fluffy. Mix in the egg and vanilla, beating until smooth.
  • Combine flour, baking powder, and salt in a medium bowl. Mix dry ingredients into the creamed mixture until a soft dough forms. Divide dough into quarters, tint each with a different food color. Wrap in plastic wrap and chill for 2 hours.
  • Preheat the oven to 350 degrees F (175 degrees C). Take half of each colored dough and roll them into 3/4 inch balls. Combine 1 pink, 1 green, 1 blue, and 1 orange ball to form a large ball. Roll the large ball into a 12-inch long snake-like roll, then coil it to create a 2 3/4 inch round cookie. Space the cookies 3 inches apart on a lightly greased baking sheet and gently insert lollipop sticks into the bottoms of the cookies.
  • Bake cookies until lightly browned, approximately 8 minutes. Allow to cool completely before storing in an airtight container.
