Indulge in a delicious ploughman's sandwich made with fresh homemade seed soda bread for a satisfying lunch option.
Ingredients:
  • 165.00 ml plain flour, plus extra for dusting
  • 125.00 ml wholemeal plain flour
  • 50.00 gm traditional rolled oats
  • 16.00 gm brown sugar
  • 1.20 gm salt
  • 1.25 gm bicarbonate of soda
  • 2 tsp linseeds
  • 1 tsp caraway seeds
  • 27.20 gm sultanas
  • 200g tub natural yoghurt
  • 200g sliced ham
  • 100g cheddar, sliced
  • 4 gherkins
  • 4 pickled onions
  • 50g mixed salad leaves
  • 82.50 ml sweet mustard pickles
Instructions:
  • Preheat your oven to 220C/200C fan-forced and line a baking tray with baking paper.
  • In a large bowl, mix together flours, oats, sugar, salt, bicarbonate of soda, seeds, and sultanas. Add the yoghurt and combine to form a soft dough. Transfer the dough to a floured surface and knead until smooth.
  • Form the dough into a ball and gently place it on a baking tray. Pat it down to create a 14cm round shape. Make a deep cross on the top of the loaf. Bake for 25-30 minutes until golden brown and the bread sounds hollow when tapped. Let it cool for 15 minutes before serving.
  • Assemble ham, cheddar, gherkins, onions, and salad on a stylish serving board. Accompany with sliced bread and pickles for a delightful spread.
