Plum and pecan muffins bursting with fruit flavor, enhanced by aromatic ginger.
Ingredients:
  • 2 cups all purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon ground ginger
  • 1/2 teaspoon baking soda
  • pinch of salt
  • 1 cup plain Greek yogurt (such as Fage® 2%)
  • 1/2 cup orange juice
  • 2 eggs
  • 1/4 cup melted unsalted butter
  • 1 teaspoon vanilla extract
  • 2 cups diced pitted plums
  • 1/2 cup chopped pecans
Instructions:
  • Heat the oven to 350°F (180°C) and prepare a 12-cup muffin tin with cooking spray or paper liners.
  • Combine flour, sugar, baking powder, ginger, baking soda, and salt in a large bowl, stirring until well mixed.
  • Combine yogurt, orange juice, eggs, butter, and vanilla in a bowl and whisk until fully mixed.
  • Create a crater in the dry ingredients, pour in the yogurt mixture, and gently mix until just combined. Carefully incorporate the plums and pecans. Spoon batter evenly into the muffin tin cups.
  • Bake until muffins are golden and a toothpick inserted in the center comes out clean, 20-25 minutes in the preheated oven.
  • Cool muffins in the pan for 5 minutes to let them set, then transfer them to a wire rack to cool entirely.
