Vegetarian-friendly breakfast recipe.
Ingredients:
  • 140g pecan
  • 20.00 gm caster sugar
  • 7.20 gm runny honey, plus extra to drizzle
  • 75g plain flour
  • 40g unsalted butter, softened
  • 32.00 gm brown sugar
  • 45g oats
  • 2.50 gm ground cinnamon
  • 8-10 large plums, halved, stones removed
  • Light olive oil spray
  • 420g yoghurt
Instructions:
  • Preheat your oven to 180°C.
  • Spread pecans on a prepared baking sheet and coat with caster sugar and honey. Bake for 15 minutes until caramelized and lightly browned. Quickly pulse in a food processor until coarsely ground for a textured crumble.
  • Combine flour and butter in a large bowl, using your fingertips to create fine crumbs. Mix in brown sugar, oats, 1/2 teaspoon cinnamon, and pecan crumbs. Spread mixture onto a lined baking sheet and bake in the oven for 20-25 minutes until golden and crispy.
  • Heat a chargrill pan over high heat while spraying the cut side of the fruit with oil. Cook the fruit cut-side down for 1-2 minutes, then transfer to an ovenproof dish.
  • Drizzle plum halves with luscious honey and generously sprinkle with the flavorful pecan crumble. Bake in the oven for an additional 10 minutes or until the plums are perfectly tender and juicy.
  • Prepare the cinnamon yogurt drizzle by combining the yogurt, 1/2 teaspoon cinnamon, and 1 teaspoon honey in a bowl. Refrigerate until serving.
  • Before serving, generously drizzle the cinnamon yogurt over the plum halves and sprinkle the remaining pecan crumble on top.
