Baked ham with plum glaze

Juicy baked ham topped with sweet caramelized plums.
Ingredients:
  • 330.00 gm plum jam
  • 131.25 gm apple juice
  • 45.00 gm brown sugar
  • 23.40 gm Dijon mustard
  • 8 1/2 kg full leg ham
  • 40.00 ml whole cloves
  • 89.38 gm honey
  • 20g butter
  • 12 plums
Instructions:
  • Preheat your oven to 160C or 140C fan-forced. Trim the rind from around the shank of the ham about 10cm from the knuckle, ensuring to keep the fat intact. Score the fat in a diamond pattern with a sharp knife. Put the ham in a large baking pan. Drizzle half of the glaze over the ham. Place cloves in the fat diamonds on the surface of the ham. Bake for 2 hours, basting with the remaining glaze every 30 minutes.
  • In a small saucepan, mix together jam, juice, sugar, and mustard. Cook over low heat for 10 minutes until the glaze slightly thickens.
  • Simmer honey and butter in a saucepan until bubbling. Add whole plums and simmer gently for 8-10 minutes until tender.
  • Thinly slice the ham and plate it with the honeyed plums.
