Fresh plum upside-down cake - simple, delicious, and perfect for serving warm on the day of baking.
Ingredients:
  • 2 tablespoons brown sugar, or to taste
  • 1.5 tablespoons blanched almond flour
  • 3 plums, pitted and sliced
  • 0.5 cup unsalted butter, softened
  • 0.5 cup white sugar
  • 1 egg, at room temperature
  • 0.75 teaspoon vanilla extract, or to taste
  • 1.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground cinnamon
  • 1 cup milk, at room temperature
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and let an 8-inch square of butter melt in the warm oven.
  • Take the pan out of the oven and swirl to spread the butter evenly across the bottom. Sprinkle brown sugar and almond flour over the butter. Place plum slices on top.
  • Cream together softened butter and sugar until light and fluffy. Add egg and vanilla extract, and continue mixing until well combined.
  • Combine and sift flour, baking powder, salt, and cinnamon in a separate bowl. Alternately mix the dry ingredients with the milk into the butter mixture. Fold gently until dry spots vanish. Pour the batter evenly over the plums and tap the pan on the counter to remove any air bubbles.
  • Bake in the oven until a toothpick comes out clean, 40 to 45 minutes.
  • Using a serving plate, carefully flip the pan to invert the cake onto the plate. Allow it to cool for approximately 15 minutes until no longer hot. Cut the cake and serve it warm.
