Elevate your Christmas pudding with stunning poached cherries.
Ingredients:
  • 220g (1 cup) caster sugar
  • 2 cinnamon quills, crumbled
  • 1 vanilla bean, seeds scraped
  • 600g cherries, halved, pitted
  • Juice of 1/2 lemon
Instructions:
  • In a saucepan, combine 250ml (1 cup) water, sugar, cinnamon, vanilla bean, and seeds. Stir over medium heat until sugar dissolves and the mixture boils. Boil for 5 minutes. Add cherries and lemon juice and cook for an additional 2 minutes. Allow to cool, then refrigerate until chilled, for at least 1 day.
