Poached cinnamon cherries

Ingredients:
  • 115g caster sugar
  • 42.00 gm fresh lemon juice
  • 1 cinnamon stick
  • 600g cherries, pitted, rinsed
  • 20.00 ml port
  • Ice cream or cherry yoghurt, to serve
Instructions:
  • Combine sugar, lemon juice, and cinnamon stick in a saucepan over gentle heat until sugar is dissolved. Fold in cherries, cover, and let simmer for 10 minutes.
  • Transfer the cherries to a bowl using a slotted spoon. Boil the syrup for 2 minutes, then stir in the port.
  • Drizzle the syrup over the cherries and gently mix them together. Spoon into individual bowls and enjoy with a delicious scoop of ice cream or cherry yogurt.
