Cherries in spiced rose

Spicy cherry topping enhances vanilla ice cream.
Ingredients:
  • 1kg cherries, stalks removed
  • 500g sugar
  • 500ml rose petal
  • 2 whole star anise
  • 1 cinnamon stick
Instructions:
  • In a large saucepan over low heat, simmer cherries, sugar, wine, star anise, and cinnamon until sugar dissolves, about 5 minutes, stirring occasionally.
  • Turn up the heat to medium until it simmers. Stir occasionally and let the cherries cook until tender, about 10 minutes. Then, use a slotted spoon to transfer the cherries to a sterilized preserving jar. Turn the heat up to high to bring the liquid to a boil. Cook for 5 minutes until the syrup thickens slightly. Take off the heat and pour the hot liquid over the cherries. Seal the jar and flip it upside down for 2 minutes. Flip it back upright and let it cool down completely. Label and date the jar. Enjoy over ice cream, if desired.
