Preserved cherries in spiced port

Delicious preserved cherries in port, perfect over ice cream, brioche, or waffles.
Ingredients:
  • 250ml (1 cup) water
  • 155g (3/4 cup) caster sugar
  • 1 star anise
  • 1 vanilla bean, split lengthways
  • 1 x 8cm-strip orange rind
  • 700g fresh cherries, pitted
  • 250ml (1 cup) port
Instructions:
  • Clean a 1L (4-cup) glass preserving jar with plastic lid in hot, soapy water, rinse thoroughly, and let it air dry on a rack.
  • In a saucepan over low heat, combine water, sugar, star anise, vanilla bean, and orange rind. Stir and cook for 3 minutes until sugar dissolves. Increase heat to high, bring to a boil, and add cherries. Simmer for 3-4 minutes on medium heat until cherries soften slightly.
  • Transfer the cherries, star anise, vanilla bean, and orange rind to the glass preserving jar using a slotted spoon.
  • Bring the syrup to a vigorous boil until it thickens for about 5 minutes. Stir in the port and bring to a boil. Use a candy thermometer to ensure the syrup reaches 85°C. Immediately pour the hot syrup over the cherries in a preserving jar and seal tightly. Tilt the jar upside down for 2 minutes, then set upright and let it cool. Label, date, and store in the refrigerator for up to 1 month.
