Cherry jam: festive holiday gifts.
Ingredients:
  • 1kg fresh cherries, pitted, halved
  • 125ml lemon juice
  • 1kg jam sugar
Instructions:
  • Wash jars and lids in hot, soapy water or sterilize in the dishwasher. Dry on a rack.
  • In a large saucepan, crush the cherries with a potato masher or the back of a wooden spoon to release their juices. Stir in lemon juice and cook over low heat for 5 minutes until cherries are tender. Add sugar and cook for an additional 10-15 minutes until sugar dissolves, stirring constantly.
  • Turn up the heat and bring the mixture to a vigorous boil. Let it cook for 4 minutes or until it reaches the desired setting point. (To check for setting point, chill a small saucer in the freezer. Spoon a bit of jam onto the cold saucer and return it to the freezer for 2 minutes until cold. Test by touching the jam to see if it's firm and gel-like.) Take the jam off the heat and let it sit for 5 minutes before proceeding.
  • Carefully transfer the warm jam into jars, seal, and briefly invert for 2 minutes. Return the jars to an upright position and allow them to cool. Once cooled, label, date, and store in a cool, dark area.
