Capture the essence of summer with this easy cherry jam recipe using fresh sweet cherries for delicious year-round enjoyment!
Ingredients:
  • 3 cups pitted, chopped fresh cherries
  • 0.5 cup unsweetened apple juice
  • 2 teaspoons lemon juice
  • 2 (2 ounce) packages powdered fruit pectin
  • 3 cups white sugar
  • 4 half pint canning jars with lids and rings
Instructions:
  • In a large saucepan, combine cherries, apple juice, lemon juice, and pectin over medium heat. Bring to a boil, add sugar, and cook for 2 minutes at a rolling boil, stirring constantly. Remove from heat and skim off any foam before serving.
  • Boil jars and lids for at least 5 minutes. Fill hot jars with cherry jam, leaving 1/4 inch space at the top. Remove air bubbles by running a knife along the insides. Clean rims with a damp paper towel. Seal with lids and rings.
  • Position a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat. Carefully submerge jars into the pot using a holder, ensuring a 2-inch gap between them. If needed, add more boiling water until the water level is at least 1 inch above the jar tops. Cover the pot, bring to a full boil, and process for 15 minutes or as advised by your county Extension agent.
  • Place the jars on a flat surface, leaving some space between each one. Let them cool completely. Check the seal by pressing the lid with your finger to make sure it's tight. Store the jars in a cool, dark place.
