Vanilla cherry jam

Create festive Christmas jam with only 4 simple ingredients.
Ingredients:
  • 1 vanilla bean, split
  • 1kg fresh cherries, pitted, halved
  • 1kg Jam Setting Sugar
  • 60ml lemon juice
Instructions:
  • Scrape out the vanilla seeds from the bean using a small, sharp knife. Add both the seeds and the bean to a large heavy-based saucepan along with the cherry, sugar, and lemon juice. Cook on low heat for about 10 minutes, or until the sugar completely dissolves, stirring with a wooden spoon.
  • Turn up the heat to high and bring to a rapid boil. Cook for 10-12 minutes or until the jam reaches its setting point. To check if the jam is ready, chill a small saucer in the freezer. Remove the jam from the heat and drop a spoonful onto the chilled saucer. Place it back in the freezer for 1 minute. Run your finger through the jam to check for wrinkles and a gel-like consistency. If not set, cook for an additional 5 minutes and repeat the test.
  • Sterilize preserving jars by placing them and their lids in a deep saucepan. Cover with cold water and bring to a gentle boil. Let it boil for 10 minutes, then carefully remove the sterilized jars and lids with tongs and place them upside down on a clean tea towel.
  • 1. Remove and discard the vanilla bean using tongs. Skim any scum from the surface with a large metal spoon. Divide the hot jam among warm sterilized jars and seal carefully. 2. Briefly turn the jars upside down for 2 minutes, then return them upright. Allow them to cool completely. 3. Store the jars in a cool, dark place for up to 6 months.
