Capture the essence of summer with homemade preserved cherries - a delightful and versatile treat that lasts all winter and makes a perfect gift.
Ingredients:
  • 2 pounds fresh cherries, stems removed
  • 4 cups water
  • 0.75 cup white sugar
Instructions:
  • Check 8 half-pint jars for damage, discarding any that are cracked and rusty lids. Submerge in simmering water for 10 minutes to sterilize. Clean new lids and rings with warm soapy water.
  • Fill sterilized jars to the brim with ripe and juicy cherries.
  • 1. In a spacious pot, bring water to a boil. Stir in sugar and continue boiling until sugar completely dissolves. 2. Carefully pour the hot simple syrup over cherries into the jars, leaving a 1/8-inch space from the top. 3. Use a clean knife or thin spatula to release any air bubbles by running it along the insides of the jars. 4. Clean the rims of the jars with a moist paper towel to eliminate any spills. 5. Seal the jars with lids and firmly screw on the rings.
  • 1. Position a rack in a spacious stockpot and fill it halfway with water. Bring to a vigorous boil. Lower jars into the boiling water, spaced 2 inches apart, using a jar lifter. Add more boiling water until jars are covered by at least 1 inch. Bring to a rolling boil, cover, and process for 20 minutes.
  • Place the jars on a cloth-covered or wood surface, spaced several inches apart. Allow them to rest undisturbed for 24 hours. Press the center of each lid lightly to ensure it's sealed properly. Remove the rings and store the jars in a cool, dark place.
