Red-wine poached cherries

Ingredients:
  • 500ml red wine
  • 1 vanilla bean, split, seeds scraped
  • 1 cinnamon quill
  • 450g fresh cherries (with stems)
  • 2.50 gm arrowroot
Instructions:
  • In a pan over low heat, stir together wine and sugar until sugar is dissolved, about 1-2 minutes. Stir in vanilla pod and seeds, as well as cinnamon, and simmer over medium heat until liquid is reduced by about half, approximately 15 minutes. Finally, add cherries and cook for 1 minute.
  • Mix arrowroot, 1 tablespoon cold water, and a splash of the poaching liquid in a small bowl. Pour into the poaching liquid, simmer until thickened, then cool.
