Poached Egg and Bacon Salad (Salade Lyonnaise)

Classic French salad with frisee, bacon, croutons, poached egg, and Dijon dressing.
Ingredients:
  • 2 strips bacon
  • 1 slice French or Italian bread
  • 1 teaspoon butter
  • 1 poached egg
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon wine vinegar
  • 1/2 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Handful fresh frisée lettuce, torn into bite sized pieces
  • 1 teaspoon chopped shallots
Instructions:
  • Fry two strips of bacon on medium heat until crispy, approximately 5 minutes. Place on a paper towel to remove excess fat. Once cooled, chop the bacon.
  • Prepare delicious croutons by cubing a slice of French or Italian bread. Toast the bread cubes in a small saucepan over medium-high heat with a teaspoon of melted butter. Only turn the cubes once one side is toasted, refraining from stirring continuously.
  • Prepare your preferred method for poaching the egg.
  • Create the dressing by combining olive oil, vinegar, mustard, salt, and pepper in a small jar.
  • Create your salad: Arrange the frisée, bacon, shallots, and croutons on a plate. Drizzle with dressing and add the poached egg. Enjoy every bite.
