"Whip up a quick and delicious dinner with just six simple ingredients!"
Ingredients:
  • 36.40 gm olive oil
  • 4 middle bacon rashers, rind removed, chopped
  • 1/2 x 300g loaf ciabatta bread, cut into 2cm pieces
  • 120g salad leaves
  • 3 medium tomatoes, cut into wedges
  • 86.63 gm caesar dressing
  • 4 poached eggs (see note)
Instructions:
  • In a large frying pan over medium heat, heat 2 teaspoons of oil. Cook bacon, stirring occasionally, for 4 to 5 minutes until it turns golden and crispy. Transfer the cooked bacon to a plate lined with paper towel to absorb excess oil. Keep it covered to stay warm.
  • Heat the remaining oil in a pan until sizzling. Cook the bread, stirring occasionally, for 3 to 4 minutes until it turns a beautiful golden brown color. Transfer the crispy bread to a paper towel-lined plate to absorb any excess oil.
  • In a large bowl, combine salad leaves, tomato, bacon, and bread. Toss to mix well. Divide mixture between bowls. Drizzle with dressing, add poached eggs on top, season with pepper, and serve.
