Poached mango and raspberries with brown sugar cream

Refresh with this simple summer mango treat!
Ingredients:
  • 450.00 gm white sugar
  • 8.80 gm vanilla extract
  • 6 mangoes, peeled, thickly sliced
  • 250g fresh raspberries
  • 235.00 gm sour cream
  • 45.00 gm brown sugar
Instructions:
  • In a large saucepan over medium heat, combine white sugar, vanilla, and 2 cups of water. Stir and cook for 5 minutes until the sugar dissolves. Increase the heat to high and bring to a boil. Reduce the heat to medium-low and simmer for another 5 minutes until the syrup thickens.
  • Combine the luscious mango and vibrant raspberries in a pan and gently heat for 1 to 2 minutes until just warmed through. Take off the heat and carefully transfer the fruity mixture and syrup to a heatproof bowl. Cover and chill in the refrigerator for 2 hours until perfectly cold.
  • Whisk together sour cream and brown sugar until fully combined. Chill in the refrigerator until serving.
  • Serve the fruit and syrup in bowls topped with delicious brown sugar cream.
