Make a gourmet breakfast at home with this simple, healthy weekend starter.
Ingredients:
  • 180g rolled oats
  • 1 green pear, cored, coarsely grated
  • 625ml apple juice
  • 560g yoghurt
  • 2 tsp vanilla bean paste
  • 4 small pears, peeled
  • 2 cinnamon sticks or quills
  • 1 whole star anise
  • Pinch of saffron threads (optional)
  • 70g hazelnuts
Instructions:
  • Mix together the oats, grated pear, ground cinnamon, 1 cup (250ml) apple juice, half of the yogurt, and half of the vanilla in a large bowl. Chill in the fridge for 4 hours or overnight.
  • In a saucepan, combine whole pears, cinnamon stick, star anise, saffron (if using), remaining apple juice, and remaining vanilla. Add enough water to cover the pears, then cover with a disc of baking paper. Bring to a boil over high heat, then reduce to low and simmer for 40-45 minutes until the pears are very tender.
  • Transfer the pears with a slotted spoon to a heatproof bowl. Bring the syrup to a boil over high heat and cook for 10 minutes until it reduces by half and thickens. Pour the syrup over the pears and chill in the fridge.
  • Divide the muesli mixture among the serving bowls. Garnish with poached pears, the rest of the yoghurt, and hazelnuts. Finish by drizzling with syrup.
