Ingredients:
  • 150g butter, at room temperature
  • 160g caster sugar
  • 1 orange, rind finely grated
  • 6 eggs
  • 200g almond meal
  • 180g cornmeal
  • Double cream, to serve
  • 250ml orange juice
  • 220g caster sugar
Instructions:
  • 1. Preheat the oven to 170°C and prepare a 20cm round cake pan by greasing and lining the base and sides. 2. Using an electric beater, cream butter, sugar, and orange rind for 8-10 minutes until pale and creamy. 3. Add eggs one at a time, beating well after each addition. (Don't worry if the mixture looks slightly curdled.)
  • Mix almond meal and cornmeal together, then transfer the mixture into the pan. Bake for 40 minutes or until a skewer inserted comes out clean. Allow to rest for 5 minutes before flipping onto a wire rack.
  • In a saucepan over low heat, combine the ingredients for the syrup and stir until the sugar dissolves. Simmer for 10 minutes or until the mixture thickens.
  • Using a fine skewer, gently poke holes all over the top of the cake. Drizzle approximately 2/3 of the warm syrup over the cake while it's still warm. Slice the cake and serve with additional syrup on the side.
