Elevate your meal with creamy corn polenta, a delicious and hearty Italian side dish!
Ingredients:
  • 1 cup frozen whole kernel corn (from 1-lb bag)
  • 4 cups water
  • 1 teaspoon butter or margarine
  • 1 cup whole-grain cornmeal
Instructions:
  • Prepare the 11x7-inch (2-quart) glass baking dish by lightly spraying it with cooking spray. In a 2-quart saucepan, bring all ingredients except for cornmeal to a boil. Slowly pour in the cornmeal while stirring continuously. Lower heat to medium-low and cook for 8 to 12 minutes, stirring occasionally, until the mixture starts to come away from the sides of the saucepan.
  • Transfer the polenta into a baking dish. Allow it to cool for 15 minutes. Cover the dish and refrigerate for about 1 hour until the polenta is firm.
  • Preheat oven to 250°F. Cut polenta into 8 pieces. Spray a 10-inch skillet with cooking spray and heat over medium heat. Cook 4 pieces of polenta at a time in the skillet for about 5 minutes on each side until light brown. Transfer to an ungreased cookie sheet and keep warm in the oven while cooking the remaining pieces.
