Creamy cheese polenta

Delicious polenta side dish pairs perfectly with chicken, sautéed mushrooms, and thyme.
Ingredients:
  • 1L (4 cups) water
  • 500ml (2 cups) chicken style liquid stock
  • 375g instant polenta (cornmeal)
  • 100ml extra-light thickened cream
  • 50g (1/3 cup) coarsely grated parmesan
Instructions:
  • In a large saucepan, combine water and stock and bring to a boil over high heat. Slowly pour in the polenta in a steady stream while stirring constantly with a wooden spoon until well mixed. Reduce heat to low and cook, stirring, for 2 minutes until thickened and polenta is soft. Remove from heat and stir in cream and parmesan until fully combined. Season with salt and pepper to taste.
  • Enjoy while hot and fresh.
