Creamy parmesan and blue cheese polenta

Creamy polenta elevated with tangy blue cheese and nutty parmesan.
Ingredients:
  • 1250.00 gm (1.25 litres) water
  • 1020.00 gm (1 litre) vegetable liquid stock
  • 300.00 gm fine polenta
  • 60g butter
  • 100g mild blue cheese
  • 250.00 ml shredded parmesan
  • Salt & freshly ground pepper
  • Extra parmesan shavings to serve, optional
  • Lamb cutlets, optional
Instructions:
  • In a medium saucepan, combine water and stock and bring to a boil. Gradually stir in the polenta, then reduce heat to medium-low. Cook, stirring constantly, for 25-30 minutes until thick and creamy.
  • Simply take the pan off the heat and mix in the butter, blue cheese, and parmesan until the butter is melted and everything is blended. Season generously with salt and pepper to taste.
  • Sprinkle with additional parmesan cheese to taste. Enjoy alongside succulent lamb cutlets.
