Four-cheese sauce

Elevate veggies and pasta with luscious, cheesy sauce.
Ingredients:
  • 40.00 gm butter
  • 125ml (1/2 cup) milk
  • 80g (1 cup) coarsely grated cheddar
  • 40g (1/2 cup) finely grated Parmesan
  • 60g (1/4 cup) cream cheese
  • 80g mild blue cheese, crumbled
Instructions:
  • In a medium saucepan over medium heat, melt the butter until bubbling. Stir in the flour for 30 seconds until smooth. Remove from heat and gradually whisk in the milk until combined. Return to heat, stirring until thickened and boiling. Remove from heat.
  • Combine the cheddar, Parmesan, cream cheese, and blue cheese into the milk mixture over low heat. Stir and cook for 3 minutes until the cheese melts. Season with salt and pepper to taste.
