Cinnamon-infused Mexican shortbread cookies dusted with cinnamon sugar for a delightful twist.
Ingredients:
  • 1 cup butter
  • 0.5 cup confectioners' sugar
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 1 cup confectioners' sugar
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and lightly grease two cookie sheets.
  • Using an electric mixer, cream butter and 1/2 cup confectioners' sugar until smooth. Mix in vanilla. Combine flour, salt, and 1/2 teaspoon cinnamon, then add to butter mixture to make a stiff dough. Shape dough into 1-inch balls.
  • Combine 1 cup confectioners' sugar and 1 teaspoon cinnamon in a shallow bowl. Roll the balls in the cinnamon mixture to coat and then transfer the cookies to the prepared cookie sheets.
  • Bake in the preheated oven for 15-20 minutes until golden brown, then let the cookies cool on wire racks.
