Puerto Rican polvorones: Crumbly cookies with guava filling.
Ingredients:
  • 0.5 cup vegetable shortening
  • 0.5 cup unsalted butter, softened
  • 1 cup white sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 tablespoon vanilla extract
  • 1 teaspoon almond extract
  • 3 cups all-purpose flour, or more if needed
  • 1 (21 ounce) package guava paste, or to taste
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease two cookie sheets.
  • In a large bowl, use an electric mixer to blend the shortening and butter until smooth and creamy. Gradually add the sugar and beat until fluffy. Incorporate the egg, egg yolk, vanilla, and almond extract into the mixture.
  • Gradually incorporate the flour into the mixture until a stiff dough forms that can hold its shape when rolled into a ball. If needed, add extra flour to reach the desired consistency.
  • Shape dough into 1-inch balls and space them 1 inch apart on cookie sheets. Press your finger into the center of each ball and fill with a cube of guava paste.
  • Bake in batches in the preheated oven until lightly golden on the bottom, approximately 15 minutes, rotating racks midway; ensure not to overcook. Allow to cool briefly on the baking sheet before transferring to a wire rack for complete cooling.
