1 large pomegranate
1 orange, rind finely grated
1 vanilla bean, split
750ml vodka
Cointreau, to serve

Instructions:

Halve the pomegranate and gently tap the seeds and juice into a bowl. Transfer the seeds, juice, orange rind, and vanilla to a 750ml bottle, then pour in the vodka.
Seal the bottle and let it infuse in a cool, dark place for 2-3 weeks. Serve over ice with a splash of Cointreau.
