Indulge in a homemade pomegranate and orange jello, a delightful and refreshing treat for entertaining guests.
Ingredients:
  • 3/4 cup pulp-free orange juice
  • 2 envelopes unflavored gelatin
  • 6 tablespoons silver or gold tequila
  • 1/2 cup 100% pomegranate juice
  • 1/4 cup sugar
  • 1/4 cup water
  • Whole orange slices or orange slice wedges
Instructions:
  • Spritz 12 (2-oz) shot glasses with cooking spray and wipe off any extra gently. In a 1-quart saucepan, pour orange juice and sprinkle 1 envelope gelatin evenly over it to soften. Heat on low, stirring constantly, until gelatin dissolves completely; then remove from heat. Mix in the tequila. Evenly distribute the orange juice mixture among the shot glasses (around 2 tablespoons per glass). Arrange the shot glasses in a 9-inch square pan and refrigerate for 30 minutes or until nearly set.
  • In the same saucepan, mix together pomegranate juice, sugar, and water. Sprinkle the remaining gelatin envelope evenly over the juice to soften. Heat gently while stirring constantly until the gelatin is fully dissolved; then, remove from heat.
  • Take out the chilled shot glasses from the refrigerator once the orange layer is mostly set. Pour the pomegranate mixture evenly over the top of the orange layer in each glass, using about 4 teaspoons per glass. Chill in the refrigerator for at least 3 hours until fully set and thoroughly chilled.
  • To unmold the jello shots, dip a table knife in hot water and run it along the inside edge of each shot glass to loosen the jello. Invert the glass onto a plate to release the jello shot. Serve each shot on top of a whole orange slice or with orange slice wedges.
