Roasted chicken filled with zesty lime, fragrant herbs, and drizzled with tangy pomegranate glaze.
Ingredients:
  • 2 cups pomegranate juice
  • 0.25 cup packed brown sugar
  • 1 tablespoon cider vinegar
  • 2 cloves garlic, peeled and smashed
  • 1 tablespoon lime juice
  • 1 lime
  • 1 (4 pound) whole chicken
  • 0.5 small onion
  • 1.25 teaspoons salt, divided
  • 1 bay leaf
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon dried rosemary
Instructions:
  • Preheat the oven to 400°F (200°C) for the perfect cooking temperature.
  • In a saucepan, combine pomegranate juice, brown sugar, vinegar, and garlic. Boil over medium-high heat until mixture reduces to 3/4 cup, about 10 minutes. Remove from heat, discard garlic, and stir in lime juice. Allow it to cool for 5 minutes. Set aside 6 tablespoons of pomegranate syrup.
  • Pierce lime with a fork and place it inside the chicken along with onion, 1/2 teaspoon salt, bay leaf, pepper, and rosemary. Secure the legs with kitchen string, season the skin with the remaining 3/4 teaspoon salt, and place the chicken in a roasting pan, breast side up.
  • While roasting the chicken, brush with tangy pomegranate syrup every 20 minutes until a thermometer reads 165 degrees F, taking about 1 hour. Rest the chicken for 10 minutes, then carve and serve with a final drizzle of the flavorful pomegranate syrup.
