Vibrant pomegranate seeds enhance the flavor of aromatic chicken stew.
Ingredients:
  • 800g chicken thigh fillets, trimmed, cut in half
  • 1 brown onion, thinly sliced
  • 0.63 gm ground cinnamon
  • 1/4 tsp ground turmeric
  • Pinch ground nutmeg
  • 168.30 gm chicken style liquid stock
  • 57.20 gm honey
  • 375.00 ml wholemeal couscous
  • 375.00 gm boiling water
  • 1/2 pomegranate, seeds dislodged (see Note)
  • 57.50 gm walnuts, toasted
  • Steamed green beans, to serve
  • 125.00 ml fresh mint leaves
Instructions:
  • In a large frying pan over high heat, heat oil. Season chicken and cook in 2 batches for 4 minutes until well browned. Set aside. Lower heat to medium-high, cook onion for 3 minutes until browned. Add garlic and spices, cook for 1 minute. Return chicken to pan with stock and honey. Bring to a simmer. Gently simmer, occasionally turning chicken to coat, for 5 minutes until sauce thickens and chicken is cooked through.
  • In a heatproof bowl, combine couscous and boiling water. Add salt, cover, and let sit for 5 minutes. Fluff up the grains with a fork before serving.
  • Enhance the chicken with pomegranate and walnuts. Serve alongside couscous and green beans. Garnish with a sprinkle of fresh mint.
