Versatile pomegranate jelly swaps cranberry for holiday turkey, perfect on toast, biscuits, and pancakes.
Ingredients:
  • 7.5 cups white sugar
  • 4 cups pomegranate juice
  • 2 lemons, juiced
  • 1 (6 fluid ounce) container liquid pectin
Instructions:
  • In a large stainless steel saucepan, mix together sugar, pomegranate juice, and lemon juice. Bring the mixture to a boil over high heat. Quickly add liquid pectin and let the mixture come to a full rolling boil. Boil for precisely 30 seconds, then remove from heat and skim off any foam.
  • Carefully transfer the mixture into hot, sterilized jars leaving a 1/4-inch headspace. Seal the jars tightly and place them in a boiling water canner for 5 minutes to process.
