Tangy pomegranate and citrus relish with a hint of shallots and cilantro.
Ingredients:
  • 2 pomegranates
  • 3 tablespoons olive oil
  • 1 shallot, minced
  • 1 tablespoon lime juice
  • 0.5 cup fresh cilantro, chopped
Instructions:
  • Extract the juice from the pomegranates, being careful to keep both the seeds and juice.
  • In a small skillet over medium heat, saute shallots in oil until golden. Add pomegranate juice and seeds, lime juice, salt, and pepper. Cook for about 3 minutes until slightly reduced. Remove from heat and stir in cilantro.
  • Allow the dish to come to room temperature before serving.
