Whipped pomegranate sorbet - a sweet and tangy delight that will brighten your day.
Ingredients:
  • 3 pomegranates
  • 3 tablespoons freshly squeezed lemon juice
  • 3 egg whites
  • 2 cups heavy whipping cream
Instructions:
  • Score pomegranate rinds with a knife, crack open carefully, break into quarters following scored lines, then whack each quarter with a wooden spoon over a bowl to release seeds.
  • Use a potato masher to gently crush the seeds in a bowl to release some juice. Mix in sugar and lemon juice while continuing to mash to extract more juice.
  • In a glass, metal, or ceramic bowl, use an electric mixer to beat egg whites until stiff peaks form. Gently fold the fluffy egg whites into the pomegranate mixture.
  • Whip chilled cream in a glass or metal bowl using an electric mixer until thick. Fold into the pomegranate mixture, gently mashing to your preferred consistency while popping the seeds.
  • Transfer the mixture into freezer-safe containers and let it freeze until firm, approximately 2 hours.
