Homemade pomodoro pasta sauce bursting with fresh Italian flavors, perfect for drizzling over pasta or dunking garlic bread.
Ingredients:
  • 1 (28 ounce) can diced tomatoes
  • 2 cups water
  • 2 cups red wine
  • 0.5 (6 ounce) can tomato paste
  • 2 stalks celery, with leaves, chopped
  • 2 medium carrots, peeled and chopped
  • 1 small sweet onion, chopped
  • 3 cloves garlic
  • 1 tablespoon dried oregano
  • 1 teaspoon dried sage
  • 1 teaspoon dried parsley
Instructions:
  • Combine diced tomatoes, water, red wine, tomato paste, celery, carrots, onion, garlic, herbs, and seasonings in a large pot. Bring to a boil, then simmer on low until carrots are tender, about 1 hour.
  • Fill a blender halfway with sauce. Secure lid and pulse a few times, then blend until smooth. Transfer to a clean pot. Repeat with remaining sauce or use an immersion blender in the pot to puree.
