Delicious salmon pasta pomodoro, quick and light.
Ingredients:
  • 1 (8 ounce) package spaghetti
  • 0.25 cup extra-virgin olive oil
  • 1 onion, chopped
  • 1 tablespoon minced garlic
  • 4 (4 ounce) salmon fillets
  • salt and pepper to taste
  • 3 Roma tomatoes, chopped
  • 1 tablespoon chopped fresh basil
  • 0.5 cup grated Parmesan cheese
Instructions:
  • Bring a large pot of lightly salted water to a rolling boil. Add spaghetti and cook until al dente, about 12 minutes. Reserve 1 cup of pasta water, then drain in a colander.
  • In a large skillet over medium-high heat, heat olive oil. Add onion and garlic in a single layer, then place salmon fillets on top. Cover with a lid and cook until the salmon flakes easily and onions are tender. Flake the salmon, season with salt and pepper, and reduce heat to medium. Toss spaghetti, tomatoes, and basil with salmon, then sprinkle with Parmesan. If pasta is dry, add some pasta water and stir to combine.
