Homemade tomato sauce over angel hair pasta - quick and easy!
Ingredients:
  • 1.5 pounds Roma tomatoes
  • 1 pound capellini pasta
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • salt and freshly ground black pepper to taste
  • 4 leaves basil, thinly sliced
Instructions:
  • First, bring a generously salted large pot of water to a boil. Then, prepare a large bowl filled with ice and cold water.
  • Score a shallow "x" on the bottom of the tomatoes. Boil the tomatoes until the skin starts to peel off, approximately 1 minute. Drain them in a colander, then quickly place them in ice water for a few minutes to halt the cooking. Peel the tomatoes.
  • Run the peeled tomatoes through a food mill until they are smooth.
  • Bring a large pot of lightly salted water to a boil. Cook angel hair pasta until al dente, about 4 to 5 minutes. Save 1/4 cup of pasta water before draining.
  • As the pasta cooks, gently melt butter in a large skillet. Infuse with garlic and salt until aromatic, about 1 to 2 minutes. Stir in pureed tomatoes and some reserved pasta water. Let it simmer until thickened, approximately 3 to 5 minutes. Season with salt and pepper to your liking.
  • Portion the pasta evenly into 4 serving bowls, then generously ladle tomato sauce over each portion and finish by garnishing with fragrant fresh basil. Serve promptly to enjoy at its best.
