Spicy or mild, this speedy soup is perfect for a delicious weeknight dinner.
Ingredients:
  • 36.40 gm olive oil
  • 1 large brown onion, diced
  • 2 garlic cloves, chopped
  • 1 small red chilli, finely chopped (optional)
  • 2 chorizo sausages, chopped
  • 1 large carrot, peeled, diced
  • 2 sticks celery, diced
  • 400g can diced tomatoes
  • 1530.00 gm chicken style liquid stock
  • 312.50 ml dried small pasta shapes, such as spirali
  • 125.00 ml frozen peas
  • 400g can cannellini beans, rinsed, drained
  • 62.50 ml flat-leaf parsley leaves, chopped
  • Grated parmesan cheese, to serve
  • Crusty bread, to serve
Instructions:
  • In a large saucepan over medium-high heat, heat oil until shimmering. Add onion, garlic, chili, and chorizo. Sauté, stirring frequently, for 3 minutes.
  • Toss in carrot and celery, and sauté for 2 minutes, stirring occasionally. Mix in tomatoes and stock. Bring to a boil. Add pasta and let it simmer, uncovered, for 10 to 15 minutes until pasta is al dente.
  • Mix in the peas, beans, and parsley, simmer for 5 minutes or until the beans are heated. Season with salt and pepper to taste.
  • Serve the soup in warmed bowls, sprinkle with Parmesan and enjoy with crusty bread.
