Pork, pear and onion bake

Slow bake tender pork with sweet pears, potatoes, and onions for a delicious and impressive meal.
Ingredients:
  • 36.40 gm olive oil
  • 750g pork fillet
  • 4 cloves garlic, roughly chopped
  • 20.00 ml thyme, chopped
  • 382.50 gm beef stock
  • 3 Williams pears, cored, cut into wedges
  • 1 lemon, juiced
  • 3 red onions, peeled, cut into wedges
  • 4 potatoes, peeled, chopped
Instructions:
  • Preheat your oven to 180C (160C fan-forced). Combine pears with a splash of fresh lemon juice and let it sit.
  • In a large baking pan, heat oil on high until sizzling. Sear pork fillet for 2-4 minutes on each side until golden brown. Transfer pork to a plate.
  • 1. Preheat a pan over medium heat, then sauté the onion until golden brown for about 3-4 minutes. Introduce garlic and thyme, and cook for an additional minute. Pour in the stock and bring it to a boil. Season with salt and pepper to taste. Gently mix in the pears and potatoes, then bake in the oven for 40 minutes until the potatoes are tender.
  • Place the pork back in the pan and bake for an additional 20 minutes until fully cooked. Slice the pork and serve with potatoes, pears, onions, and a drizzle of juices.
