Pork and almond stir-fry

Flavorful Pork and Almond Stir-Fry.
Ingredients:
  • 2 (about 400g) pork fillets, thinly sliced across the grain
  • 2 red onions, cut into wedges
  • 20.00 ml finely grated fresh ginger
  • 1/2 tsp Chinese five spice
  • 18.20 gm peanut oil
  • 60g almond
  • 200g snow peas, trimmed, halved lengthways
  • 1 punnet baby corn, halved
  • 125ml oyster sauce
  • 200g fresh thin egg noodles
Instructions:
  • In a large bowl, mix the pork, onion, ginger, and five spice. Heat half the oil in a wok on high heat. Stir-fry the almonds for 2 minutes until golden, then transfer to a bowl. Stir-fry one-quarter of the pork mixture for 1-2 minutes until golden, then transfer to the bowl. Repeat with the remaining batches until all the mixture is cooked.
  • Heat the remaining oil in the wok until sizzling. Toss in the snow peas and corn, stir-frying for 1-2 minutes until tender. Introduce the pork, almonds, and oyster sauce, stir-frying for 1-2 minutes until everything is heated through.
  • Place the noodles in a large heatproof bowl and cover with boiling water. Let sit for 2 minutes to warm up, then drain well.
  • Divide the noodles evenly into serving bowls. Spoon the pork stir-fry on top and enjoy right away.
