Whip up a delicious pork and veggie stir-fry in just 30 minutes for a speedy dinner option.
Ingredients:
  • 82.50 ml almonds (skins on)
  • 36.40 gm peanut oil
  • 650g pork fillets, thinly sliced
  • 2 garlic cloves, sliced
  • 1 carrot, thinly sliced
  • 150g snow peas, trimmed
  • 3 green onions, cut into 3cm lengths
  • 20.00 ml sweet sherry
  • 42.00 gm soy sauce
  • 250.00 ml beansprouts, trimmed
Instructions:
  • 1. Preheat a wok over high heat until smoking hot. Add almonds and stir-fry for 2 to 3 minutes until toasted. Transfer to a plate. 2. In the same wok, heat 3 teaspoons of oil. Stir-fry half of the pork for 2 minutes until browned. Transfer to the plate. Repeat with the remaining pork.
  • Heat the last 2 teaspoons of oil in a wok. Throw in the garlic and carrot and stir-fry for 1 minute. Toss in the snow peas and green onions, and stir-fry for another minute. Combine sherry, soy sauce, and sugar in a jug, whisk well, then pour into the wok with the pork. Continue to stir-fry for 2 minutes or until heated through.
  • Combine almonds and beansprouts in the wok, and toss together until evenly mixed. Serve with rice.
